It contains the broken down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain.

Here's how we store our broths:
Some are put into ice cube trays for those times when just a little broth will do. They are then popped out and stored in zipper freezer bags in the freezer.
The majority of our broths are put into zipper freezer bags and frozen. We put 2 cups per bag. If you want your broth to stack, freeze them individually, flat on a baking sheet. It's best to put a paper towel between them when storing in the freezer so they don't stick together.
We fold the zipper bag over and freeze them that way on baking trays.
They are then stored in the door of our freezer.
ALWAYS place your bag of frozen broth in a container to thaw as sometimes the bags leak when thawing.
